Pomegranate Brussels Spout Salad

This is an incredible treat of a recipe! Inspired by one of my favorite chefs Giada (could she be any more perfect? I love her!)  Its fresh, sweet, savory and #allthethings in one!

Pomegranate Brussels Spout Salad    

Serves 4 as a main dish or 8 as a side

(Note-I am NOT a precise measuring kind of cook. My recipes are a rough estimate of what I use so get creative and taste as you go!) 

INGREDIENTS:

1 pound brussels sprouts, shredded, diced or sliced ( I used a Julianne slicer)   

1/2 bunch purple kale diced in 1/4 inch pieces

 1 Pomegranate seeded (or just buy the seeds pre packaged)   

1 cup chopped macadamia nuts

1/2 cup goat cheese (or cheese of choice--feta, or blue cheese would be wonderful)

For the dressing: 1/2 cup olive oil, S&P, 1 TBSP dijon mustard, 2 TBSP honey or agave, 

 

DIRECTIONS:

  1. In a small bowl, whisk dressing ingredients together and set aside
  2. Shred and cut brussels and kale and toss in a big bowl
  3. Add in crushed macadamia nuts, pom seeds and toss with dressing
  4. Sprinkle with goal cheese
