Dairy Free Corn Chowder 🍲

This recipe is simple, comforting and has all the goodness of a traditional chowder sans the dairy! I hope you enjoy.

Dairy Free Corn Chowder   🍲

Serves 6 

(Note-I am NOT a precise measuring kind of cook. My recipes are a rough estimate of what I use so get creative and taste as you go!) 

INGREDIENTS:

2 chicken breasts cooked and shredded (or 2 cups rotisserie chicken shredded)
2 onions diced
2 red bell peppers diced
1 pint baby tomatoes
1 tsp cayenne pepper and 1 tsp smoked paprika
Chicken bouillon or chicken stock 2 cups                                                                                                                     1 can full fat 1 coconut milk
2 cans organic corn (or 6 ears of corn cut off the cob)

DIRECTIONS:

  1. For the smokiest flavor, chop tomatoes and red bell pepper, coat lightly with olive oil and place under the broiler for 10 mintues
  2. Meanwhile in cast iron pot heat up olive oil and sauté onions on medium high until translucent (5-7 minutes)
  3. Add corn, chicken and broiled tomatoes and peppers and sauté for 3 minutes 
  4. Add in coconut milk, broth, and spices 
  5. Bring to a boil then turn down to simmer until ready to eat

*If you want to make this recipe vegan feel free to take out the chicken!

Serve with cilantro, cheese, sour cream or any other toppings that sound yummy! 

Make great leftovers too.
