Zoodles with Lamb Meatballs
Zoodles are a STAPLE in our home. (A Zoodle is a zucchini noodle! You use what's called a "spiralizer" to turn the zucchini into spiral tendrils of noodles) It's a great low carb swap for pasta, has a great texture and is super fun for kids to eat!
I highly recommend purchasing a spiralizer if you don't own one! You can take all sorts of things and turn them into noodles. This is the one I have that I love!
Zoodles with Lamb Meatballs
(Note-I am NOT a precise measuring kind of cook. My recipes are a rough estimate of what I use so get creative and taste as you go!)
INGREDIENTS:
1 jar high quality store bought marinara sauce
1 pound ground lam
3/4 cup pine nuts
Salt, pepper and garlic to taste
Fresh or dried herbs ( I used fresh sage and rosemary)
1/2 cup almond flour (you can also use panko or regular bread crumbs)
1 egg
6 yellow zucchini squashes (can also use green or butternut!)
DIRECTIONS:
- Pre heat oven to 350 F
- In a bowl knead together meat, spices, pine nuts, almond flour and egg with your hands
- Form Meatballs using a ice cream scoop and place on a greased baking sheet
- Cook in oven 20-25 minutes or until browned
- While the meatballs are cooking, use the spiralizer to make the zoodles-set aside
- Heat up marinara in a small pan on medium low heat
- Sautee the zoodles in a little oil in a pan (doneness depends on taste but I try to only cook them a few minutes so they are not soggy)
- To plate: place zoodles in a bowl, cover with marinara and top with meatballs!
