Julia's Famous Chicken Couscous Soup 🍲

Mayyyybbee its not famous, but it is a HIT in our home.

I usually make some version of this soup once per week and its a family favorite. 

Filled with fresh veggies, tender stewed chicken and packed with flavor this soup will not dissapoint!

Julia's Famous Chicken Couscous Soup  πŸ²

Serves 4-6 

INGREDIENTS:

2 chicken breasts
1 Onion diced
3 celery stalks diced
4 carrots diced
Salt, pepper and garlic
Chicken bouillon or chicken stock 4 cups
Israeli or pearl couscous (can sub for any small pasta or quinoa if you want to make it gluten free)
Fresh Rosemary
2 cups spinach or leafy greens like kale or swiss chard meal
Olive Oil

DIRECTIONS:

  1. Heat 2 tsp olive over medium heat. 
  2. Toss in diced onion, celery and carrots and cook for 5 minutes or until onion is translucent
  3. Pour in chicken stock or water and bouillon and bring to a boil 
  4. Once boiling, place the uncooked chicken breast into the water.
  5. Cook on medium high heat for 20-25 minutes or until chicken is cooked.
  6. Take chicken out, shred and place back in pot
  7. Turn down heat
  8. 1 hour before serving add 1 cup Israeli couscous (or quinoa) and greens

Grate fresh parmesan cheese on top!
