Chili Lime Shrimp Salad
A Summer of #SALADS
If you are anything like me, you cringe at the word salad. Because, lets face it, often times they can just turn out BORING.
I'm on this cool eating plan that really emphasizes eating TONS of veggies and salads are really the perfect way to accomplish getting them all in. So I decided, instead of just begrudgingly chomping down on the cliche tomato, cucumber, balsamic salad everyday, I would make an effort to Jazz up my salads.

Chili Lime Shrimp Salad
Here is how to what you need to make this bad boy
(Please know Im NOT A person who measures things, I just eyeball it, so nothing is specific-use your creativity and tastes!)
FOR THE SALAD:
- Lettuce (duh) You can choose spinach, romaine, red lettuce (anything you have in your fridge as far as greens go)
- Shredded Carron
- Shredded Cabbage
- Diced Green Onion
- Fully cooked shrimp (I thaw mine from frozen and cook in a little olive oil and cajun seasoning)
- Ground peanuts (or cashews if you have a peanut allergy of prefer them
FOR THE DRESSING:
- Olive oil
- Lime Juice
- S&P
- Garlic (crushed or dried)
- Agave (you don't need much-around a tsp)
- Sriracha
- (Not pictured-but cilantro would also be a wonderful flavor addition to this dressing)
TO ASSEMBLE:
Place greens in the bottom of a wide bowl and top with the rest of your veggies, shrimp and dressing and VIOLOA! No more boring salads
