Simple Power Greens Salad
Getting back to clean eating the last couple of weeks, I have ben inspired by so many fruits and vegetables. I love remembering how tasty they are just on their own. When you reduce sugar, alcohol, and processed foods, simple fruits and vegetables are infused with new flavor and wonder. They come to life in a whole new way because your taste buds are not confused with unnatural or overdone flavor.
This salad has been part of our meal plan on our detox so I wanted to share it with you! It's simple, fresh, and packed with healing foods!
Simple Power Greens Salad
Serves: 1
SALAD INGREDIENTS:
- 2 cups greens ( I love the mixed greens boxes from Costco)
- 1 tomato diced
- 1/2 cup sprouts
- 1/2 cucumber diced
- 1/2 cup toasted pumpkin seeds (did you know 1/2 cup of pumpkin seeds have 9g of protein!?)
- 3/4 cup chopped jicima
DRESSING:
- 2 TBPS olive oil
- 1 TBSP apple cider vinegar
- 1 TBSP fresh chopped cilantro
- Salt pepper and garlic to taste
- 1 tsp honey
Mix all dressing ingredients with a whisk. (you can also make extra dressing in large batches-it saves in the fridge for up to a week)
TOSTED PUMPKIN SEEDS:
- 2 cups raw pumpkin seeds. You can get these in bulk at your local whole foods or sprouts.
Simply place seeds in a 400 degree oven for 3-5 minutes until brown. Store in an airtight container in the pantry!
Assemble the salad with all ingredients and top with homemade dressing!
