Fall Harvest Quinoa Salad
This recipe is fast becoming a staple in our home. The fresh fall inspired ingredients are sure to impress! Simple, healthy and delicious!!
Fall Harvest Quinoa Salad
INGREDIENTS :
- 2 cups cooked quinoa (follow package instructions)
- 1 baked sweet potato (peeled and tossed in olive oil-bake for 30 min at 350 degrees)
- 4 cups arugula
- 1 diced green apple
- 1 diced shallot
- 1/2 cup toasted pecans
- 1/2 cup crumbled goat or feta cheese
For the dressing
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 tsp cinnamon
- 1 tsp ginger
- 1 TBPS maple syrup
- Salt, pepper and garlic to taste
TO ASSEMBLE:
1. Whisk all dressing ingredients together and set aside
2. Place all salad ingredients in a bowl and toss with dressing right before serving
3. Saves well for up to two days in the refrigerator once dressed
