Easy, Breezy....Chicken Salad!
Todays salad is the epitome of #SIMPLE
I just need ease when it comes to my healthy eating - I'm not a Pinterest magician, I just want to be able to whip something up in 5 minutes AND have it be healthy.
This salad delivers on all fronts, and it sure does hit the spot!
Easy, Breezy....Chicken Salad!
WHAT YOU WILL NEED:
- 1 can chicken, drained
- 3 TBPS mayo (I prefer Chosen Foods avocado oil mayo)
- 2 celery stalks, diced
- 1/4 cup diced onion
- Salt, pepper and garlic powder to taste
- 1 cup diced cucumbers
- 1 cup shredded purple cabbage
- Olive oil
TO ASSEMBLE:
- Place canned chicken, mayo, onion, celery and salt and pepper into a bowl and stir
- Place cucumber and shredded cabbage in a bowl (or to go Tupperware) and drizzle with olive oil
- Place mixed chicken salad on top

- Green Goddess Chicken Salad - add some cilantro, avocado and chopped green onion!
