Easy, Breezy....Chicken Salad!

Todays salad is the epitome of #SIMPLE

I just need ease when it comes to my healthy eating - I'm not a Pinterest magician, I just want to be able to whip something up in 5 minutes AND have it be healthy.

This salad delivers on all fronts, and it sure does hit the spot!

WHAT YOU WILL NEED:

  • 1 can chicken, drained 
  • 3 TBPS mayo (I prefer Chosen Foods avocado oil mayo)
  • 2 celery stalks, diced
  • 1/4 cup diced onion
  • Salt, pepper and garlic powder to taste
  • 1 cup diced cucumbers
  • 1 cup shredded purple cabbage
  • Olive oil

TO ASSEMBLE:

  1. Place canned chicken, mayo, onion, celery and salt and pepper into a bowl and stir 
  2. Place cucumber and shredded cabbage in a bowl (or to go Tupperware) and drizzle with olive oil
  3. Place mixed chicken salad on top

Here are 5 bonus super duper simple ideas to jazz up your chicken salad even more.

  • Green Goddess Chicken Salad - add some cilantro, avocado and chopped green onion! 
  • Curry Chicken Salad - add curry powder, turmeric and dried cranberries! 
  • Balsamic Strawberry Chicken Salad - add 1/4 cup fresh diced strawberries, 2 TBSP of balsamic and 1 tsp sugar
  • Cobb Chicken Salad - add bacon bits, deviled egg and blue cheese crumbles
  • Waldorf Chicken Salad - add diced granny smith apples, walnuts and raisins
