Cheesy Egg bites

These are so easy to whip up and make for a great breakfast on the go!

What you need:

  • 8 eggs

  • 1 cup cottage cheese

  • 2 TBSP corn startch

  • salt pepper and garlic powder to taste (I do usually around 1/2 tsp each)

  • 1/2 cup shredded cheese

  • (optional-add spinach, tomato, onion or any other veggie or seasoning)-see notes below for cook times for veggies

What to do:

  • mix all ingredients in a blender and pour into a greased muffin tin ( I have found silicone pans or silicone insert cups work best here-when using a metal muffin tin I recommend using paper liners to avoid sticking)

  • boil a pot of water and place the water in a cake pan to sit inside the oven—the egg bite tin wont go inside it, just next to it

  • bake at 300 Degrees F for 25 minutes !

NOTES:

If you add veggies (sometimes I do) it can make the egg cups a bit watery, so just bake them an extra 3-5 minutes
